Corn and Pea Mashed Potatoes

Ingredients
- 2 tablespoons olive oil
- 3/4 cup peas
- 1 cup fresh corn kernels
- 4 minced garlic cloves
- 1/2 cup milk (rice/almond milk will work)
- 2 teaspoons of salt
Directions
Prepare your preferred mashed potatoes (but do not add milk).
Heat the oil in large skillet over medium-high heat.
Add the peas, corn, and garlic. Cook until corn is soft, stirring often, about 4 minutes.
Add the milk and bring to a boil; immediately remove from heat, cover, and let steep 10 minutes.
Stir the mixture into the potatoes. Season with salt.
