Coconut Sorbet with Rhubarb Topping

Ingredients

  • Coconut Sorbet
  • 1 1/4 cup of low fat coconut milk
  • ½ cup coconut flakes
  • 4 1/2 cups of ice
  • ---------------------------------------------------------------
  • Rhubarb Topping
  • 3 cups sliced fresh rhubarb
  • 1/2 cup sugar or honey
  • 1/4 cup water
  • 1/8 teaspoon ground nutmeg *** (make sure nutmeg is bladder friendly for you.)
  • 1/4 teaspoon vanilla extract

Directions

  1. Place all ingredients for the sorbet into your blender and puree until smooth.

  2. For the rhubarb topping; using a saucepan, combine all the ingredients and bring to a boil. Reduce the heat; simmer, uncovered, for 10 minutes, until the rhubarb is tender.
