Brown Rice Pilaf - Baked

Ingredients

  • 2 Tbl butter
  • 1 apple - finely chopped
  • 1 cup brown rice
  • 2 1/2 cups chicken broth - water will work
  • 1 tsp salt
  • 1/4 tsp cinnamon*** - you can substitute nutmeg, allspice, or anise if you can.

Directions

  1. Preheat the oven to 350 degrees.

  2. Melt the butter in a large skillet over medium heat. Sauté the apple until its tender and light golden in color.

  3. Add the rice and sauté, stirring for three minutes.

  4. Add the chicken broth/water and bring to a boil.

  5. Stir in the salt and cinnamon.

  6. Cover and bake for 1 hour, until rice is tender.
