Basil Mashed Potatoes

Basil Mashed Potatoes


  • Basil oil
  • 1 1/2 cup fresh basil
  • 1/2 cup plus 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • Mashed potatoes
  • 5 lb Yukon Gold potato
  • 1 1/2 cups rice milk
  • 1 stick (1/2 cup) unsalted butter
  • 1 1/4 teaspoons salt


  1. Place the basil with the oil and salt in a blender; puree until smooth. Pour the basil oil through a fine-mesh sieve, pressing on and discarding solids.

  2. Peel and quarter the potatoes. Cover the potatoes with salted cold water in a heavy pot and simmer for 25 minutes.

  3. While potatoes are simmering, bring the milk, butter, and salt, to a simmer until butter has melted.

  4. Drain the potatoes in a colander and return to pot. Add the hot milk mixture and mash with a potato masher until almost smooth, and then stir in 4 tablespoons herb oil.

  5. You can add chopped fresh basil for texture.
